How to converte latitude longitude to an reasonable accurate 2d map location

Ok bare with me since i have 0 knowledge in geography. What we tried to do in our project is put world location into a 2d grid map and use that for further data analysis. So basically try to fit different longitude and latitude signals into the closest grid notes. Since i had no knowledge in geography and most of us are data analysis algorithm programmer and stuff, we just kinda thought longitude and latitude is just like 2d coordinates on a 3d sphere. But as it always is, turns out when u working on a real world issue stuff is never that simple.

My colleague tried to search on different places online and apparently every formula with reasonable accuracy for actual data analysis seems to require a lot of information about the terrain itself. We kinda find a way around that but its gonna take awhile before we can get the data. But we need to make a demo in like 3 days and im just wondering is there a quick formula that can guarantee a reasonable grid(the notes are not too altered due to geometric of terrain and the shape of the earth)? The grid itself can implement ways to get around but its going to be at a huge cost of the efficiency if it can be solved it would be really nice.
